What a handful of straw changes

Charcoal burns long and steady. It cooks the eel through, but it does not add aroma.

Rice straw is the opposite. It flares hot and dies within seconds. In those few seconds the surface fat is burned away and a nutty smoke aroma takes its place.

No smoker produces this. No sauce imitates it. It only comes from real rice straw, and only if the burn is timed to the second so the smoke stays clean. This is what separates Manjang from other eel houses in Gangnam.

We buy at the Gochang Fisheries Cooperative auction as licensed broker No.1, choosing Korean Japonica eel of 580g and above ourselves.

Charcoal

The heat is changed continuously between the first and second sear so the skin crisps while the flesh keeps its moisture.

Rice straw

Rice straw is burned for a few seconds to lay a clean smoke aroma over the surface.

What kind of eel do you serve?
Korean Japonica (Anguilla japonica), the freshwater eel native to Korea and Japan. Manjang is a certified seller of Korean freshwater eel and holds broker licence No.1 at the Gochang Fisheries Cooperative, so we select the fish ourselves at auction.
What is the rice-straw finish?
After grilling over charcoal we place the eel over burning rice straw for a few seconds. The straw flares hot and dies quickly, burning off surface fat and leaving a nutty smoke aroma. It cannot be reproduced with a smoker or a sauce.
Is the aroma too strong?
No. The burn lasts only a few seconds, so the smoke stays light. Older guests and children eat it comfortably.
How much does a meal cost?
Eel is priced per whole fish: 49,000 KRW for one person, 98,000 KRW for two, from 138,000 KRW for two to three. Weekday lunch sets start at 30,000 KRW.
Do you have private rooms?
Yes, five rooms with doors. The largest seats up to ten. Please call ahead, especially for weekend evenings.
Do you speak English?
Our staff speak limited English. This page lists the full menu and prices, and pointing at a dish works perfectly well. For a reservation, calling 02-542-9992 or booking through Naver Place is easiest.
Is parking available?
Yes, in front of the restaurant. If it is full, use the parking lift at the NH Bank Building (146 Dosan-daero); we cover 50% of the fee.
